Hard to think of a better opportunity for our test of the big event dedicated to the flavors of the world - the Salone del Gusto - and concomitant meeting of more than 5,000 representatives of food communities that make up the Earth Mother, the global network founded in 2004 and consists by all those who are committed to supporting food production that respects the environment and local communities.
We can not fail also to a certain air of the house due to the fact that many of our Italian guides are enriched by their contributions collected in collaboration with the project Terra Madre.
The link between travel and food is evident. Along the roads of taste are moving more and more people and do so with a level of awareness on the rise. The research of flavors, foods and food cultures has become one of the levers that lead to travel the world, next to those of art, meeting with other people, welfare or simple entertainment. For those who interpret the journey in this way, the Turin event is a dream come true. In the spaces of the Salone del Gusto and Terra Madre, in fact, meet with marvelous ease all the roads on the planet.
You can start from very near, Italy, and dedicate time to explore and taste deliciously sometime around the stand of our own. If the halls are a faithful miniature of the universe world, however, there is nothing to expand the range. After another taste of the energy supplied by the bee honey thyme black Sicily, just a few steps I decided to fly across the Atlantic and land in one of the most interesting areas of the Exhibition: that of Latin America.
Hence the temptation to pick up a Lonely Planet is irresistible with the premiere of the new edition of the guide Argentina (November 2010) under the nose, we love to smell the scents and explore the colors of the stands. The first meeting with the delegates of the Slow Food Presidium of the Andean potatoes of the Quebrada de Humahuaca, planted between 1800 and 3800 meters above sea level.
A few feet is enough to move to the Andes and come across a mysterious product whose origin is lost in the pre-Hispanic past. We talk about the root of yacón, which gives a sweet and juicy flesh pale yellow color, the texture similar to those of the pear.
Given that one of the themes of this year is the memory of the food or the importance of the transition from one generation to the other of wisdom food, Slow Food to remember that Argentina is not only remote Andean areas. Manuel Alberti in the district of Buenos Aires, for example, are implementing a project of taste education and the creation of a community garden for the children in conditions of poverty.
The profound connection between food and culture and the need to pass on this wealth is thus confirm one of the keys to understanding strongest event, as indicated by Carlo Petrini in his opening speech.
By mid-morning the issue was taken up by the Laboratory of the earth "Pleasure and well-being", in a seminar at the School of Advanced Studies on Sustainability and Food Policies which indicated prospects of dense philosophical references to the conquest (or return, so that is also ) of a harmonious relationship between food and pleasure.
In an even stronger and more concrete, however, the fact that food brings with it undisputable values has reminded the stand of Afghanistan (took only a few steps to move in Asia), with its cultivation of saffron become a powerful tool for subtract land to crops of opium.
A day of remembrance and sustainability could only end with a jump to the exhibition dedicated to Africa, the mother continent. To return to the saffron, the first color that comes to us is red, that of the pistil of this flower that collects in the community Taliouine in the Moroccan province of Taroudant.
Morocco is still the protagonist with Argan oil that is produced according to ancient wisdom in the regions of the south coast, between Safi and Goulimime. There are other delicious ideas (and wonderful inspiration for an African trip), such as those coming from mullet roe obtained from Imraguen nomadic fishermen in Mauritania, or dall'oroupounnà (powder of baobab leaves) prepared by the Dogon people in Mali.
And the old Europe? Even around his stand the taste sensations are not lacking. You can see the goodness of the sausage Mirandesa before going to Portugal or powers organoleptic garlic sarac Ljubitovica, collected by the Croatian women with age-old wisdom and still be able to keep away the witches of fasting. Impossible, a few yards away, do not get groped by a glimpse of the fabulous cheeses of Guyenne and Gascogne, we also offer one of the most contagious smiles of the day.
For orientation in all this abundance that remains is to rely on personal inclination. So, it is just for the sake of the writer if at the end of the exploration we bagged some jar Saxon Village Preserves (from Transylvania with flavor), a bottle of oil from Ragusa, a slice of goat cheese aged in caves of Jämtland (wisdom Swedish, fortunately, is not confined to assemble furniture), and a sweet and memorable Bosnian plum compote.
Get right on the road, at this point, is the best way to enrich the experiences buds. For the next appointment with the Salone del Gusto and Terra Madre, however, have to wait until 2012.
